Dairy Hill Semillon
Wine
Briar Ridge Dairy Hill Semillon is sourced from the undulating slopes of the Dairy Hill Vineyard, grown on well drained sandy loam soils the Hunter Valley.
Yields are kept low to ensure fruit intensity and flavour. Small parcels of premium fruit are handpicked, crushed, destemmed and chilled. The free run juice is kept separate from the pressings and cold settled.
The clear juice is racked and inoculated with a white wine yeast. Fermentation occurs at 12-15°C for 15 days. The wine is then racked of yeast deposits, stabilized, fined and filtered for bottling.
Reserved for only the finest vintages, the wine is made in limited quantities.
Pale yellow green, Briar Ridge Dairy Hill Semillon is light to medium bodied with citrus flavours, fine acidity and great length. Cellaring potential is 10 years.
